Pan Seared Salmon with Sweet Potato Mash & Steamed Broccoli
This is one of my favorite meals. In the colder months I serve it with broccoli but once the warmer months arrive I serve it with a garden salad.

There is something extremely satisfying about listening to salmon skin sizzle in the frypan. And the smell is divine. I also love the contrast between the colors of the orange sweet potato against the clear green of the broccoli. This dish is a feast for all your senses and it is fairly easy and quick to cook.
First up you need to prepare your sweet potato mash and then move onto the pan seared salmon and lastly steam the broccoli or make the salad. The sweet potato mash will take around 20 minutes to cook and the pan seared salmon around 10 minutes. Our house doesn't like our vegetables over cooked, so I often put the broccoli in a metal bowl and tip the sweet potato water over the top of it. I then put a saucepan lid over the bowl and let the broccoli cook in the heat of the hot water while I finish off the rest of the dinner.
